The Sparkling Malvasia from San Luris winery is a wine made with pure Malvasia grapes, born from the union of historic family vineyards and traditional winemaking techniques. This is a modern sparkling wine with a distinctive feature: the secondary fermentation occurs directly in the bottle, as with great sparkling wines, but without disgorgement. This means no sugars or the classic liqueur de tirage are added, allowing the yeasts to complete their life cycle entirely in the bottle.
The winery has chosen to use a crown cap instead of the traditional mushroom cork, aiming to offer the consumer a continuously evolving sparkle. This evolution is made possible by the crown cap and the presence of fermentation sediment, which impart freshness, richness, and longevity to the wine.
The Winemaking
The harvest is strictly manual and slightly anticipated from the optimal picking period to ensure the wine’s proper freshness. The harvested grapes are placed in crates and selected directly in the vineyard. Once in the winery, whole clusters undergo a gentle pressing; only the free-run must from the first pressing (about 50% of the juice obtained) is used to produce this wine. The must settles cold for about 12-15 hours, followed by fermentation at a controlled temperature of 16-18°C. The wine then ages on fine lees, which are periodically stirred until the following spring when bottling takes place. The bottles rest in the cellar for 12-15 months before being released to the market.
