The Winemaking

This attention to detail allows for stability in the finished wine. After harvesting, the grapes are destemmed without crushing, promoting a slow and gentle maceration that lasts between 15 and 20 days, without the use of sulfites. This natural approach continues with the malolactic fermentation, which occurs at the end of maceration, helping to make the wine softer, rounder, and more stable. The wine is not clarified and is racked 2-3 times in steel barrels, without the use of the bâtonnage technique.
