The Winemaking
The winemaking process for Cap Classique Brut begins with the manual harvesting of grapes from three selected vineyard plots, once the grapes have reached the right sugar level. The grapes, collected in 9 kg crates, are whole-bunch pressed after meticulous hand sorting. 90% of the must ferments in stainless steel tanks, while the remaining 10% matures in old 400-liter French oak barrels. After blending, the wine is bottled with yeast for secondary fermentation and left to rest for at least 23 months before disgorging.

On the nose, it offers a fresh and clean bouquet, with intense aromas of apples, citrus, and pastry notes.
