The Methode Cap Classique Brut Sparkling Wine from Spier Winery is a refined South African sparkling wine that embodies the elegance and freshness of Chardonnay and Pinot Noir grapes. Comprising 61% Chardonnay and 39% Pinot Noir, this wine is a perfect example of how winemaking tradition can blend with innovation, offering a unique sensory experience.

The Winemaking
The winemaking process for Cap Classique Brut begins with the manual harvesting of grapes from three selected vineyard plots, once the grapes have reached the right sugar level. The grapes, collected in 9 kg crates, are whole-bunch pressed after meticulous hand sorting. 90% of the must ferments in stainless steel tanks, while the remaining 10% matures in old 400-liter French oak barrels. After blending, the wine is bottled with yeast for secondary fermentation and left to rest for at least 23 months before disgorging.
Tasting the wine
Visually, Cap Classique Brut displays a lively light straw color with a fine and persistent perlage. On the nose, it offers a fresh and clean bouquet, with intense aromas of apples, citrus, and pastry notes. On the palate, the wine is balanced, with good acidity that leads to a lively and lingering aftertaste, making it extremely pleasant to drink.
Food Pairings
This sparkling wine is ideal for accompanying a variety of dishes. It pairs perfectly with raw vegetables in pinzimonio, fish tempura, spicy salmon tartare, and sushi and sashimi dishes. Additionally, it excellently complements grilled fish and fried foods and is perfect with lean fish-based appetizers.
