The Cabernet Sauvignon Ivory Label Diamond Collection from the Francis Ford Coppola winery is a bland of 89% cabernet sauvignon, 7% petit verdot, and 4% segalin grapes; all grown in the vineyards of El Dorado and Paso Robles, in the heart of California.
The Winemaking
The harvest is manual and only the selected grapes are brought to the cellar for winemaking. Fermentation takes place in steel. The wine then ages in French and American oak barrels for about 12 months. After bottling, the wine rests for a few months in the cellar before being placed on the market.
Tasting the wine
Intense garnet red. The aroma is elegant with pleasant fruity notes of blackberries and cherries that leave room for hints of cloves and anise to finish with scents of toasted coffee. Complex and well structured on the palate with the right tannic texture and good persistence.
