THE WINE
The Crémant De Bourgogne Brut Blanc de Blancs AOC from the Pierre-Marie Chermette winery is a brut sparkling wine produced with 100% Chardonnay wines. The vineyards are located in Oingt, Le Bois d’Oingt and Légny where the clayey-limestone terroir is perfect for the Chardonnay. A cémant produced with a blend of three vintages; a very well balanced wine of great quality.
THE WINEMAKING
The harvest is manual; the grapes are put in special boxes with holes in order to drain the juice and prevent oxidation. The selected grapes are wine made in the traditional method, in steel tanks at a controlled temperature of 16 ° C. The blend of 3 vintages is then bottled with the yeasts and left to rest for at least 12 months before disgorging.
THE TASTING
Bright straw yellow with golden reflections and a fine and persistent perlage. The aroma is fresh with pleasant hints of white flowers that alternate with citrus notes to close with nice mineral sensations. Savory and full-bodied on the palate with an excellent correspondence between aromas and flavor. Persistence is also good.
FOOD PAIRINGS
Perfect as an aperitif, it goes very well with fish and seafood even raw.
