THE WINE
The Blanc de Blancs Brut vintage champagne from the Yannick Prevoteau winery is produced only with Chardonnay grapes. This champagne is created only in suitable years, and it takes over ten years to prepare. The maison has warned that it will make the vintages only for 2012 and 2018.
We are located in Damery, in the Marne Valley department, in the heart of the Champagne region. The work on the ground and in the vineyard, combined with a production process that fully respects the environment, has allowed the winery to obtain HVE level 3 (High Environmental Value Vineyard) and VDC (Sustainable Viticulture in Champagne) certifications.
THE WINEMAKING
The grapes are harvested and wine-made in steel; the winemaking takes place without the malolactic fermentation. The wine is then bottled for the second fermentation and remains on the lees for 120 months (10 years). The 2010 vintage was bottled in March 2010, and the Dégorgement happened in November 2021.
THE TASTING
Golden yellow with a very fine, creamy and persistent perlage. The aroma is exquisite; in addition to the classic hints of bread crust, pleasant citrus notes alternate with fruity hints of apricot and pear. After a few minutes in the glass, you can perceive the incredible sensations of jam. Fresh and creamy on the palate, complex and well structured, with a perfect match between aromas and flavours. Very long persistence.
FOOD PAIRINGS
Perfect with raw fish, it goes very well with soft cheeses such as Vacherin but also with truffles.
