The Wine
The Trebbiano d’Abruzzo from the Emidio Pepe winery is produced with 100% Trebbiano grapes grown in biodynamic method. We are talking about an autochthonous, rather ancient grape variety that Emidio Pepe has managed to elevate. The vineyard is located at the foot of the Gran Sasso mountain; the great temperature range between day and night and the proximity of the Mediterranean Sea give this wine unique freshness, aromas and minerality.
THE WINEMAKING
The harvest is strictly manual and, once in the cellar, the grapes are pressed with the feet as it used to be done many years ago. Fermentation uses only indigenous yeasts and is carried out in old wooden vats. The wine ages for a few months in traditional vitrified cement tanks. Follows bottling without filtration and a few more months of rest in the cellar before being placed on the market.
THE TASTING
Straw yellow in color. The aroma is very fragrant; fruity notes of renette apples intertwine with hints of dried fruit to make room for scents of champignon mushrooms, to close with clay puffs. Fresh and mineral on the palate, it is a full-bodied wine with a pleasant persistence.
FOOD PAIRINGS
Perfect with lil fish and shellfish, also raw but also soft cheeses. Must try with seafood risotto.
