The vintage Prosecco Asolo Cuvée Indigena comes from a particle of the Loredan Gasparini winery in the Montello hill where the vines were planted in 1975. 100% Glera grapes is called indigenous cuvée because only indigenous yeasts are used in the cellar. After manual harvesting and soft pressing, the fermentation takes place in steel tanks at a controlled temperature. The wine is then moved into the autoclave for foaming (Martinotti method) where it remains on the yeasts for 9 months.
The outcome is a bright straw yellow wine with very fine and delicate perlagé. The aromas are elegant and complex, with fruity notes of apple and yellow peach followed by hints of bread crust. Full-bodied and velvety on the palate, with a refined sip, which relies on a pleasant freshness.
This vintage Prosecco is perfect as an aperitif, goes well with raw fish and omelettes with vegetables.
